In Italy, the approach of Christmas means it is almost prosciutto making time, and here at the American Italian Club, we carry on that tradition with our annual "Prosciutto Class". If you are interested in learning how to make real Italian prosciutto then read on.The class is a process, and will be held in 3 MANDATORY sessions (Jan, March & Nov.) Each participant must submit enrollment form along with payment no later than Thursday Jan.10th, 2019, as we need time to obtain the hams. The cost for the class, which includes your ham, is $100.00. (If 2 people want to attend the class and, split a ham then the cost would be $150.00 total). All sessions will be held at the A.I.C. Participants must have a cool, dry place to cure the ham for a 6 week period after the initial session. The area must be able to maintain a temperature of 45 degrees F during this period, and not subject to fumes or odors which could harm the ham. If you do not have such a place, you may be able to get with other classmates who do. After the initial 6 week period, the ham can hang in any area that can maintain a temperature of 60 to 70 degrees F.
